Chef Juan Carlos Palomera Almejo

Chef Juan Carlos Palomera Almejo, originally from Talpa de Allende, Jalisco, has dedicated nearly 30 years to European cuisine at the Kaiser Maximilian restaurant in Puerto Vallarta. He has hosted 26 international chefs at the International Gourmet Festival and collaborated with figures such as Chris Bradley, Tara Glick, and Stefan Glantschnig. His style is distinguished by its fusion of European techniques with local ingredients, establishing him as a culinary icon in Mexico.

Mixologist Mario Mendoza

Mario Mendoza, originally from León, Guanajuato, has over 20 years of experience in the hospitality industry. He has shared his Mexican Liquid Culture—a fusion of creativity, sustainability, and national pride—in cities such as Rome, Madrid, and London. His approach centers on creating innovative cocktails with local ingredients and environmental responsibility, which has positioned him as a benchmark in national and international mixology.
